Nikolaus day lunch

The perfect Nikolaus day, snow behind the windows, two pots simmering slowly and some pumpkin ragout for lunch, with a little treat afterwards ;-)

Pumpkin Ragout

Ingredients (for 4 portions)

olive oil
a large onion
two celery stalks
two large carrots
a cinnamon stick
some thyme and bay leaves
salt and pepper
a cup of white whine
a cup of tomato puree
a small hokkaido pumpkin
a teaspoon sweet paprika

Chop the onion, carrots and celery finely and let them soften in the olive oil with the cinnamon, thyme and bay leaves. Pour the whine and let it reduce, then add the tomato puree and let simmer a couple of minutes. Add the chopped pumpkin, the paprika and let simmer for 20 or 30 minutes. You can add some water if it turns out too dry.

You can serve it with some pasta or rice, or like me, with lots of melting cheese and a big chunk of baguette.
